Chicory (Cichorium intybus) is a deep-rooting perennial broadleaf species with an exceptionally strong taproot capable of exploring soil well below the rooting zone of many annual crops. It can recover nutrients from deeper soil layers and contribute to biological soil structuring. Chicory is drought tolerant once established and maintains growth under conditions where shallower-rooted species may suffer. In diverse mixtures it provides an excellent functional contrast to fibrous-rooted grasses and shallow-rooting legumes.
